Today, I’m gonna share a new Indian recipe that is Aloo gobi curry (sabji). Aloo gobi is cooked in almost every house in my country. I learned this recipe from my mother. Trust me it’s always delicious. You must try.
It is healthy with some spice and a homemade sabji. That is why it always adores me. I eat it with roti (chapati). So let’s begin with this yummy recipe…
Ingredients: –
2 tbsp Ghee or oil
1 tbsp Cumin Seeds
1 inch Ginger – chopped
4-5 cloves Garlic – chopped
1 Tomato – small diced
1 medium whole Cauliflower – cut into florets
2 medium Potatoes – medium diced
2-3 fresh green chili – chopped
2 tbsp Coriander Leaves – chopped
Add salt to taste
Spice mixture: –
¼ cup water
½ tbsp Turmeric Powder
½ tbsp Kashmiri Red chili Powder
¼ tbsp Asafoetida (optional)
½ tbsp Cumin Powder
Directions: –
1. In a bowl add water, turmeric powder, Kashmiri red chili powder, asafoetida, and cumin powder and mix everything properly and keep it aside (we’ll add it later)
2. Now in a Sauté Pan (or Braiser Pan) heat up ghee (or oil) on medium flame
3. Add cumin seeds, ginger, green chili, and garlic; stir the mixture for a few seconds, after that add the prepared mixture in it and keep stirring until the ghee (or oil) starts separating (about 3-4 minutes)
4. Add tomato, cauliflower, potatoes, salt and mix properly
5. Cover the cooking pan and cook on low heat for 14-15 minutes with the lid on
6. Remove the lid; Make sure the potatoes are cooked thoroughly using the stir stick; if so, sprinkle the chopped coriander leaves on top
7. Switch off the stove, keep the curry covered for 2-3 minutes
8. Serve it with hot delicious Chapati or Naan!
